Sichuan Venison with Noodles
This is a great way to use our delicious Venison Mince and is a real crowd pleaser - bang a platter of this in the middle of the table and watch it disappear! You will need:
olive oil
500g Venison Mince
2 Garlic Cloves
1 tsp Lazy Chilli
1 tbsp Chinese Five Spice
2 tsp Sichuan peppercorns, crushed
1 tbsp Hoisin Sauce
1 tbsp Muscovado sugar
2 tbsp Soy Sauce
2 Pak Choi, halved
400g Noodles
2 Spring onions
Fresh Coriander
100ml water
Method:
Put a good slug of Olive Oil in a non stick pan and heat. Add the Venison Mince and brown well breaking it up.
Stir in the crushed garlic, lazy chilli, Chinese Five Spice, Sichuan pepper and sugar. Mix well and cook until sizzling. Keep mixing it for 5 mins then remove the mince and pop it into a warm bowl and put in the baking oven for 15 mins.
In a bowl, mix the Hoisin sauce, Soy sauce and 100ml of water.
In the non stick pan, add another slug of oil and once hot, add in the Pak Choi and fry in all the delicious venison juices until tender.
Cook the noodles according to the instructions on the packet then add to the non stick pan with the Pak Choi. Add in the sauce and mix well.
Put the noodles etc on a large platter, top with the Venison Mince and scatter over the Spring Onions and Coriander.
