Large fillet or loin of venison.
For best results bring to room temperature, drizzle with olive oil and season. Brown fillet in hot pan all over for about 3 minutes then put in hot oven or Aga for 6 to 9 minutes depending on cooking preference. It is easily cooked on a BBQ but don’t cremate it!
