Whole Fillet or Strip Loin of Venison

Feeds 8-10 people depending on portion size.

For best results bring to room temperature, drizzle with olive oil and season. Brown fillet in hot pan all over for about 3 minutes then put in hot oven or Aga for 6 to 9 minutes depending on cooking preference. It is easily cooked on a BBQ but don’t cremate it!

For rare the core temperature with a meat probe should be 57C, medium rare core temp 63C and well done 73C.

Remember from rare the more you cook it the less blood there will be and the tougher the meat will get.
